AyranaşıThe preparation of Ayranaşı which is consumed especially during cold days of the year: 1 water glass of wheat (coarsely ground wheat), 1 water glass of chickpea, 4 water glass of strained yoghurt, salt, water, mint leaves. You should soak the wheat and chickpea one day earlier separately. You can do this at the evening of the previous day. After filtering the water, you should put them into saucepan and boil them with water at a level over their top parts. After putting the boiled pulses on the saucepan, fill it with water fully and boil the mixture. Then add salt to the yogurt and take one spoon of water from the water of the pulses on the saucepan. Add to the yogurt to the saucepan slowly in order for yogurt to loose its consistence, and blend the mixture.
When the boiling starts, turn off the heat and let it cool. If you want it to be totally cold, you can put into refrigerator when it reaches to room temperature. If you want, you can create an aesthetic view by using mint leaves.
Helle AşıThe ingredients for Helle Aşı are as follows: 1 tablespoon of margarin, 1 tea glass of flour, 4 - 5 water glass of flour, red pepper, mint and salt. The preparation: melt the margarin on the saucepan. Fry the one tea glass of flour with oil. Take the saucepan from the heat. Add 4 -5 glasses of water and smash with a wooden spoon. Bring it to the heat again. Cook it until it reaches to a viscous consistence. Add salt. Pour into service plates and add red pepper and mints.
BişiThe ingredients are as follows: 1 egg, 1 tablespoon of oil (for not clinging), 2 big spoons of yogurt, 1 small tea spoon of carbonate, 1 small tea spoon of salt, enough amount of flour, sunflower seed oil (to fry) The preparation: Mix the liquid and dry materials and knead. Add the flour slowly and create the pastry. Pour some flour on the place where you will knead the pastry and thin the pastry out for 3 mm. And then cut the pastry into square, rectangle shapes and fry on the oil to cook its both sides equally.
Mafiş Dessert
The ingredients of the dessert: 1 bowl of yogurt, 1 egg, 1 baking soda, flour, salt. The preparation:Mix all the ingredients and add as much as flour and create a pastry as thick as an earlobe. Spread the pastry with a roller in a middle thickness ( approximately for half cm.) Cut the pastry into squares with a knife (just like in the image) and fry within an abundant hot oil to be get puffed up. It is an economic recipe which can you prepare within a short time easily. It can be serviced in breakfast.
HıngelThe ingredients for Hıngel are: 5 potatoes, 2 eggs, 2 glass of water, 3 tablespoons of butter, 1 bunch of red pepper, 1 bunch of black pepper and as much as flour. The preparation: Pour 2 glass of water into kneading bowl for the pastry. Break 2 eggs on the water and add as much as flour and knead the pastry. Boil the potatoes and smash them. Saute the smashed potatoes with a half tea glass of oil. Add a bunch of red pepper and black pepper if you want to the potatoes and take it from the heat. Pluck the pastry into small parts and cut into circular shapes with the help of a glass mouth. Place the mixture with potatoes into the middle of the pasties. Fold the edges of the pastry to inside and close. Then boil them within water added with salt and oil. Then the meal is filtered and it is brought to the service plate. 3 table spoon of butter is fried for its sauce. Hot butter is poured on the pastry.
HasutaThe ingredients: 2 glass of sugar, 125 gr. Butter, 3 tablespoon of oil, a bunch of salt, 1 tea glass of flour, 1,5 glass of water. The preparation: Melt the butter and oil in the pan and add the sugar within it, and brown them until they are caramelized. Blend the water, salt and flour in a different bowl. Add this mixture to the caramelized sugar and mix with a wood table or a whisk apparatus. Continue to brown on a middle level heat for ten - fifteen minutes. Bring the Hasuta into service plate and service it while still hot.
Rice with Goose MeatThe ingredients: 1 whole goose, 1,5 glass of rice, 1,5 glass of bulgur rice, 1 tea glass of vermicelli, 2 tablespoon of butter, Goose meat water, hot water and salt. Preparation: Bring the goose to the saucepan and cook it with enough water for 4-5 hours. You can add onions which was chopped large, black peppercorn and bluefish into it. Bring the goose cooked fully into oven tray and spread oil on it with a brush. Tip: The goose meat should be fried after it is cooked.
Cook it in an oven for 200 degrees which has already been heated. While preparing the rice, add butter and vermicelli in the saucepan. Then add rice and bulgur rice which have already been soaked and fry them. Put goose meat water and hot water. Add salt and close the saucepan lid and let it be cooked. Put it on the service plate. You can either put the goose as whole or after separating into smaller parts.
